A Moving Dish...Literally
It's rare for me to see my meals move prior to consumption. Whatever animal that is placed before me on a table is presumed lifeless after having been cooked. And that's how I like it!
This case is different. The movement of bonito (thinly sliced fish skin) stems from its reaction to intense heat from the cauliflower rice. It proved to be a fascinating dish and a tasty one at that!
When in Houston, I strongly suggest you seek this restaurant find. The menus offers a few "shares" that my party enjoyed - particularly the crispy chick peas, pretzel, and foie gras. I would guess that the menu changes every so often but the locally-sourced ingredients of this farm-to-table restaurant are pure and evident in every taste.
